Behind the Scenes: The Development of a New Culinary Blender

The chefs spoke. And we listened.

Chefs in kitchens around the world told us they needed an advanced culinary blender at their side. They needed a blender that was versatile enough to allow them precise control, but had enough power to handle all the fresh ingredients that are the mainstay of modern kitchens. Most importantly, they needed a blender that could unleash their creativity and help them to put their signature of flavor in every dish, no matter what the style of cuisine. We took note of everything they said — and we delivered.

After more than two years of research and development, Hamilton Beach® Commercial has unveiled the successors to its tried-and-true 990 food blender: the all-new, super-powered HBF1100S and HBF1100 series.

EXPEDITOR™ 1100S

The HBF1100S and HBF1100 series, the newest additions to the EXPEDITOR™Family of Culinary Blenders, are the best culinary blenders we've ever created. Designed to keep up with the world's busiest kitchens, their agility, productivity and capacity are impressive and built to last. 

"Our customers have always known us for the great work we do with mixing and blending" in the front of the house, says Product Manager Karen Williams-Roman. It was time to show what HBC could do in the back of the house, and here's what we did:

 

  1. Lowered the profile. Chefs told us they had a hard time using commercial blenders that were tall and heavy. The weight prevented them from moving the blender around the kitchen, and having the lid above eye level made it hard to monitor blending. HBC's design team solved this problem by moving the motor of the HBF1100S and HBF1100 behind the jar for a more compact profile. 
  1. Amped up the motor. Today's chefs are processing more fresh and raw ingredients — ingredients that require both strength and finesse. With a 3.5hp motor, the HBF1100S and HBF1100 more than quadruple the power of the 990. Of course, performance is about more than horsepower; the jar and blade were both redesigned for optimal speed and uniformity. Even challenging spreads like hummus can be blended to a perfect consistency in seconds. 
  1. Increased the capacity. Busy kitchens need large-batch capacity. The HBF1100S and HBF1100 hold up to 4 liters/1 gallon, making it easy to create fresh salad dressings, soups and more in quantity. 
  1. Improved all-around safety. The HBF1100S and HBF1100 each include a lid interlock function so the unit can only be operated with the lid safely in place. Even novice or untrained cooks can safely use it. 
  1. Gave chefs more control. Culinary creativity and international influence often require more control pad choices than just a hi-lo switch. That's why the HBF1100S and HBF1100 base unit include variable speed options for control and finesse. It also includes two program buttons — with no in-house programming required. If you've developed a blender cycle for a specific application, such as salad dressing or batter, HBC engineers will program memory cards with that cycle so you can ensure uniform delivery of your signature flavor across all locations. 
  1. Built it to last. We've met chefs who are still using their Hamilton Beach drink mixer from the 1950s. We wanted the HBF1100S and HBF1100 series, too, to be a dependable partner for years. In testing, "we'll run the unit 24 hours a day, 7 days a week until something fails," explains Brian P. Williams, group manager for project engineering. We tested the HBF1100S and HBF1100 over and over again, until we were confident it met HBC's highest standards for durability. 
  1. Expanded the options. Historically, the large capacity of the 990 has only been available in a stainless steel jar. Through the years, and with the development of the other members of Expeditor family of culinary blenders such as the HBF500 and the HBF600, we found that chefs like to be able to select between polycarbonate and stainless steel jars. As a result, we now offer both in the 4 liters/1 gallon capacity: the HBF1100S comes with a stainless steel jar, and the HBF1100 the clear polycarbonate.

 

In short, we feel we've made the HBF1100S and HBF1100 series the best commercial culinary blender available, based on input from our customers. Our product, design and engineering teams spent two years concepting, designing, prototyping and testing the new model, right here in Richmond, Virginia. Then we turned it over to field testers working in both fine dining and institutional settings. They told us the HBF1100S and HBF1100 felt like having another skilled pair of hands in the kitchen — a sous-chef they could count on.

 

The 120V HBF1100S and HBF1100 are now available in North America and Latin America, and the 230V models will launch globally in August 2016.
