Watermelon and Feta Salad
Ingredients:
800g watermelon - cut into 1½ - 2 in pieces
½ bulb fennel - sliced as thinly as possible
1 red onion - sliced as thinly as possible
185g feta cheese
1 bunch fresh basil - picked and cleaned
2 limes, juiced
Sea salt, olive oil for vacuum sealing and for garnish.
Instructions:
- Use your PrimaVac™ in-chamber vacuum sealer to seal the watermelon in a vacuum sealer pouch, along with the juice of 1 lime, a drizzle of olive oil, and a pinch of salt. Let rest for 15 minutes. Open the pouch and repeat the process one more time, then let the mixture rest again for 15-20 minutes.
- Mix the onions, fennel, juice of 1 lime, olive oil and a pinch of salt together in another vacuum sealer pouch, then seal and let rest for 20-30 minutes.
- Remove the watermelon, fennel and onions from the pouches. Mix them together gently in a bowl. Crumble the feta cheese on top. Garnish with fresh basil leaves, a pinch of sea salt and a drizzle of olive oil.
