While the word "Hollandaise" means "Dutch" in French, it does not seem to have originated in Holland -- rather, it is considered one of the [French haute cuisine "mother" sauces](https://en.wikipedia.org/wiki/Sauce#French_cuisine).

[Blini are thin, wheat-based pancakes,](https://en.wikipedia.org/wiki/Blini) Russian in origin, that might be best known for the fact that they are often garnished with caviar. 

Our EXPEDITOR™ variation uses buckwheat flour in addition to all-purpose flour to boost the flavor profile and give them a more traditional texture. They are also delicious with smoked salmon and crème fraiche, as we recommend below.

[Chimichurri](https://en.wikipedia.org/wiki/Chimichurri)is a versatile, fragrant sauce featuring fresh herbs and vinegar. Primarily used for marinating meat for grilling, there are green versions and red versions. We present our green variation below.

This sauce is excellent on cuts of beef like flank steak, and we developed this version in particular for use on grilled lamb chops.

The most prominent ingredient is the spice mixture called [garam masala](https://en.wikipedia.org/wiki/Garam_masala), a fragrant and flavorful medley of ground spices that is a key part of cuisines from multiple regions across the Indian subcontinent.
