Surprisingly sweet for a dish with this many chilis in it, it was a big draw during the FoodAsia2016 show at the Singapore Expo in April. And according to Wikipedia, this dish has been promoted as "one of Singapore's National Dishes" by the Singapore Tourism Board. Read on and enjoy!
Sweet & Sour Fish
(Recipe by JELCO PTE Ltd)
Ingredients:
500g whole Garoupa fish or Sea Bass
1 green capsicum cut into cubes
1 red chile chopped
1 tomato cubed
1 large onion, chopped
Sauce Ingredients:
2 garlic cloves and 1 large onion, blended
4 Tbsp tomato sauce
2 Tbsp white vinegar
2 Tbsp soy sauce
1/2 cup pineapple syrup (from can)
1 tsp sugar
1/2 tsp salt, pepper
1/2 cup water
Cornstarch
Directions:
1. Deep fry fish in hot oil. Dish out, drain well and set aside in a serving dish.
2. Heat wok with oil, saute chopped garlic and cubed big onions for 2 minutes.
3. Add in sauce ingredients (except cornstarch) and bring to a boil.
4. Add in the rest of the ingredients and simmer for 2 minutes. Thicken sauce with cornstarch to desired consistency.
5. Pour sauce over reserved fish and garnish before serving.
