Customers will swoon for the sweet taste of honey-pear butter. This versatile recipe can be served with bread, used to garnish pork or folded into buckwheat crepes for an unexpected brunch treat.
Honey-Pear Butter

Ingredients:
1 cup very ripe pear, peeled, cored and cubed
1 cup clarified butter, softened
¼ cup honey
Directions:
1. To make clarified butter, melt 1 cup butter in a small heavy pan over low heat. Skim off froth and carefully pour clear clarified butter from pan, leaving the milky residue behind.
2. Place pear in a high performance EXPEDITOR™ culinary blender and blend until pureed. Add butter and honey and process until completely smooth. Makes about 2¼ cups. The butter can be made up to two days in advance and refrigerated.
3. To make honey-pear butter crepes, spread about 1½ tablespoons Honey-Pear Butter evenly over surface of hot buckwheat crepes, fold crepes in quarters and serve immediately. Makes 8 filled crepes.
