Guacamole with Tomatillos

guacamole with tomatillosGive your restaurant's fresh guacamole a little something different with the unusual lemony flavor of tomatillos. Tomatillos resemble little green tomatoes and can be found in specialty produce stores and well-stocked supermarkets. They are also sold canned if you can't find them fresh.

Guacamole with Tomatillos
(Recipe by the California Culinary Academy)

Ingredients:

4 tomatillos
3 canned green chilies, seeded
2 large ripe avocados
1 tbsp. minced onion
salt and freshly ground pepper, to taste
¼ cup cilantro leaves, minced, for garnish
 
Directions: 

1. If using fresh tomatillos, discard husks and wash the tomatillos. Boil in a small amount of water until just tender (about 5 minutes); drain.
2. Combine tomatillos and chilies in a culinary blender and process until smooth.
3. Halve the avocados and remove seeds. Scoop out pulp and mash with a fork. Stir in tomatillo mixture and onions. Season with salt and pepper.
4. Spoon into a serving bowl and sprinkle with cilantro. Makes 2½ cups.
