Try gado-gado sauce paired with blanched vegetables, tofu and hard-boiled eggs for a distinctive taste of Indonesian cuisine -- in 2018, the recipe in its full salad form was promoted as a national dish of Indonesia. Though it appears similar at first glance because it features peanuts as a key ingredient, don't confuse it with satay, its (arguably) more famous cousin.
Gado-gado Sauce
(Recipe by JELCO PTE Ltd)
Ingredients:
100g roasted peanuts
2 garlic cloves
25g palm sugar
2 pc chilli padi or bird's eye chili
½ tsp toasted shrimp paste
½ tsp asam jawa (tamarind juice)
Juice of ½ lime
½ Tb sweet soya sauce
1c hot water
Salt and pepper to taste
Cooking Directions:
1. Put the peanut, garlic, palm sugar, chilli padi, shrimp paste in the EXPEDITOR™ 1100S culinary blender. Grind until all the ingredients are well mixed.
2. Add the tamarind juice, lime juice, sweet soya sauce and blend until mixed well.
3. Pour the mixture into a large bowl and add in hot water slowly in the mixture while stirring until the consistency is smooth.
4. Serve with the protein and vegetables of your choice. The recipe featured by JELCO used prawn crackers and tofu.
