EXPEDITOR™ Buckwheat Blini

Blini are thin, wheat-based pancakes, Russian in origin, that might be best known for the fact that they are often garnished with caviar. 

Our EXPEDITOR™ variation uses buckwheat flour in addition to all-purpose flour to boost the flavor profile and give them a more traditional texture. They are also delicious with smoked salmon and crème fraiche, as we recommend below.

Buckwheat Blini

Ingredients:

965 g                  whole milk
300 g                  whole eggs (about 5)
85 g                    melted butter
7 g                      sugar
7 g                      salt
5 g                      citric acid
5 g                      baking soda
510 g                  all-purpose (AP) flour
280 g                  buckwheat flour
 
 

Instructions:

  1. Place milk and eggs in jar of the EXPEDITOR™ 1100 Series Culinary Blender and pulse. Add melted butter, sugar, salt and citric acid and pulse again.
  2. Add baking soda and flours and blend until just incorporated and no lumps remain. Batter should be fairly thin.
  3. Spoon batter into hot oiled pan, and flip once golden brown. Serve with smoked salmon, or caviar and crème fraiche. Yields approximately 2L.
