Cilantro Edamame Hummus

edamame-668197-editedHummus doesn't have to mean chickpeas—edamame can also be the base of a flavorful paste that's perfect for dipping, roll-ups, or anything else a chef can imagine. This recipe is an easy side for any kitchen with a high-performance commercial food blender. And it's the kind of unusual dish that gets customers talking and keeps them coming back. 

Cilantro Edamame Hummus
(Recipe by Hamilton Beach Commercial)

Ingredients:

2 packages (12 oz. each) frozen shelled edamame, thawed
1 cup tahini
1 cup water
1 cup packed cilantro leaves
½ cup freshly squeezed lemon juice
6 tablespoons extra-virgin olive oil
4 cloves garlic
2 teaspoons kosher salt
1-1/2 teaspoons ground cumin
¼ teaspoon cayenne pepper 
 

Directions:

1. Place all ingredients in a blender jar. We recommend the EXPEDITOR™ 600 or EXPEDITOR™ 1100S
2. Press the CHOP function and use the variable speed dial starting on 1 (low speed) and slowly increasing to 3 (high speed).
3Press STOP when desired consistency is reached.
