You may be wondering how many recipes are involved in the mezze platter featured in our EXPEDITOR™ recipe book -- we have featured seven different recipes on this blog, including our version of harissa paste below.
Why so many? A mezze platter is "a selection of small dishes...often served at the beginning of multi-course meals" according to Wikipedia. That means that we had to create several recipes to fit that definition.

EXPEDITOR Harissa Paste
Ingredients:
30 g Ancho chiles
30 g Guajillo chiles
30 g New Mexico chiles
20 g Arbol chiles
200 g olive oil
10 g garlic cloves, peeled
6 g ground cumin
6 g ground coriander
50 g sherry vinegar or verjus
5 g lemon zest
to taste salt and pepper
Instructions:
1. Break the stems off the chiles and shake out as many seeds as possible. Cover them with boiling water; weigh down the chiles with a plate to keep them submerged and soak until soft, about 30 minutes.
2. Transfer the chiles and 120 ml of the soaking liquid to the jar of your EXPEDITOR™ 600 series culinary blender. Add the olive oil, garlic, spices and vinegar and blend until smooth.
3. Add herbs and lemon zest and pulse to desired consistency.
4. Season with salt and pepper. Transfer to sealable container and top with ¼ inch of olive oil. Yields 400.
