As we head into fall football season here in the US, it's a perfect time to share this twist on an old favorite, blue cheese dip. Tofu and plain yogurt switch up the flavor and texture for a new approach.
Blue Cheese Dip
(Recipe by the California Culinary Academy)
Ingredients:
½ cup soft tofu
2 Tbsp. rice vinegar
⅓ cup nonfat plain yogurt
¼ cup sour cream
2 cloves garlic pressed
3 oz. blue cheese, crumbled
Directions:
In a high performance EXPEDITOR™ culinary blender, purée tofu, vinegar, yogurt, sour cream, and garlic until smooth. Stir in blue cheese. Spoon into a serving bowl, cover with plastic wrap.
Serve with chicken wings or vegetables.
